First off. Anything from 2016 up wards should not be remade.

That being said I voted for
all listed ornithopods Deinosuchus and Edmontonia

i avoided the carnivorous ones with sharp teeth because Schleich would screw it up somehow anyway so why bother.

I'd be curious to see remakes of Kronosaurus, Saichania and Styracosaurus.

Schleich seem to be heading in a nice direction with their 2018 releases, I wouldn't mind seeing them try again with their Baryonyx and Ceratosaurus.
