The trick is to corner them...and then try to avoid the beak, claws and spurs.

Also, remember to hold their wings down once you've got them, or they'll flap in your face and escape again! I think the real trick in making chickens easy to catch for any reason is to get them tame. Ours aren't very happy being lifted off the ground, but they'll let you walk up to them and do it as long as you're nice and calm and gentle so they don't perceive you as scary. Nonetheless, I like that poster ARUL - one up for the dinosaurs!  :D
