It seems like a glaring omission and a long-necked plesiosaur would be popular with punters - if this isn't just my bias talking! It's not particularly 'necky' but I'd like to see a Cryptoclidus. For such a well-known species, both scientifically speaking but also culturally speaking since its appearance in Walking With Dinosaurs, there are surprisingly few (any!?) toys of it.

It's not an especially close relative, but the closest thing in morphospace might be their Keichousaurus mini. I think avatar_Concavenator @Concavenator is right that if and when they make a long-necked plesiosaur, it will probably be Elasmosaurus.

You're right about Keichosaurus. Is a sauropterygian, like plesiosaurs, so a pretty close relative.
