I'd say the Princeton Field Guide to Dinosaurs, 2nd edition, is the best guide to individual dinosaur species, being virtually comprehensive.  Just be sure to remember that not all of the authors taxonomic decisions are the mainstream view.

For an overall summary of everything related to dinosaurs, their world, and the science around them, I recommend The Complete Dinosaur, 2nd edition (Life of the Past):
