There's a user named RedPaws0206 on Lego Ideas who, among other things, has designed some really interesting projects featuring a variety of prehistoric creatures. I doubt any of them will ever be made, but perhaps they'll serve as inspiration for your own play:

Personally I'd have varied the coloration a bit, but I think it's a solid design overall.

An Opabinia mech. It's a really elegant design! With some color substitutions it would be a perfectly good 'organic' Opabinia.

That mammoth is excellent riiiight up until we get to the legs. The loose tire pieces being used here are a bit distracting as just being tires.

Speaking of the Mammoth : something closer to the Ankylosaur and the Brachiosaur above, that more obviously have the appearance of Lego toys in terms of geometry of the pieces, with more visible studs. I dunno how to explain it more accurately.
Also came across this old Lego Rex on the internet which would perfectly reflect my idea of the perfect Lego-style dinosaur/prehistoric animal^^

Ah, I think I understand. When you go to a lot of trouble to disguise the studs, you sort of lose the spirit of building with bricks? I have some sympathy for that.

Yes, the Spinosaurus has something more Lego in its style, in comparison with the Mammoth.
It's a cool one despite its quadrupedal stance which, however, might be subject to modification later on according to the designer.

Having had a look at his Flickr + Insta accounts, I do find his work super impressive. His arthropods mechs are particularly well achieved.
=> Would be keen on knowing if it is based on parametric modeling^^
