Is a Schleich Ankylosaurus valuable? I have the chance to pick one up today. Should I?

Schleich never made an Ankylosaurus. they always made Saichania.

In fact here is a list of Ankylosaurs they made

Sauropelta

Saichnia (Several diffrent figures of this animal were made by them)

Edmontonia

Weird, it sure looks like an Ankylosaurus. It's got the big tail club and is kind of a tan/beige color over all.

Takama is right.
No Schleich Ankylosaurus on the market.

If you mean the "big" brown Saichania in the Replicasaurus line, it's a nice figure (but not so rare).
It depends on the price because it isn't so difficult to find one (even "new" or "mint conditions").

On a side note. the First Saichania Figures they made Look more like a Euoplocephalus/Scolosaurus, then a Saichania.

Is it a Very tiny figure?
