Lately I have seen many dinosaur models, like the new Kaiyodo triceratops vinyl model, that shows the head of the animal covered in a layer of keratin, leaving just certain areas exposed and covered with skin. Is this based on recent findings or just another wild theory?

Pachyrhinosaurus

I remember this was big a few years ago. IIRC, it was Horner's theory. I was on-board with it back then but I can't remember much in the way of evidence for it.

This hypothesis was tested and partially rejected by this paper, which found evidence for rows of scale anchor points in Pachyrhinosaurus. http://www.ohio.edu/people/witmerl/Downloads/2009_Hieronymus_et_al._Pachyrhinosaurus_skin.pdf

Also, that theory was showcased in a docummentary, I dont recall if at 2/3 of the total time or so.

Yup, in Dinosaur Revolution they even laser-scanned Triceratops skin impressions from "Lane" to create a texture map for the integument. I don't know if Lane preserves anything from the skull...?
