I've noticed that on certain dinosaur models(like the Safari Ltd. 2017 Tyrannosaurus), they have two hole on the roof of their mouths. They are also present in the dinosaurs from Dinosaur Revolution. If you don't remember them from your middle school frog dissections, these are called internal nostrils. I don't quite know the purpose of them however. They are present in some modern day animals like lizards and frogs.

Well, in all those vertebrates mouth (fauces), nose and (inner) ears are connected to each other by canals or openings,... this is why it may happen that , for example, when you drink/eat something and suddenly laugh, you blow that stuff outta your nose, or why you can hold your nose and blow to depressurize your ears.

Yup, we have them too, they're just hidden behind our palate and open into our pharynx.

I'm just glad we cant smell our own breath with them. Or... can we?

On a related note I think dinosaurs most likely did not breath through their throats to prevent chocking. I first learned of this feature when I watched a chicken choke on a piece of food for several minutes without dyeing. So this is how T Rex could rip off chunks of meat and swallow them whole without choking to death.
