A quick run-down, in no particular order are some worth a look:

Dinosaur Art (Steve White ed, 2012)
Dinosaur Art II (Steve White, 2017)
The Art of the Dinosaur (Kazuo Terakado, 2017)
Dinosaur Imagery (John Lazendorf collection - or part of)
Paleoart; Visions of the Prehistoric Past (big heavy book on ye olde practitioners)
The Paleoart of Julius Csotonyi
Charles Knight The Artist Who Saw Through Time

And there are a lot of Dinosaur books illustrated by top paleo artists, though not being books on paleo art as such.
I have all but two of the books on this list and would recommend the others based on what I know of them.

Thanx for all the information PhilSauria. From what I can gather a few of these books are compilations of different artists. Some of them also have their work depicted in multiple books. Is there one that you would suggest over another? Looks like they all are great no matter what.

The only books that focus on a single artist are the last two on the list, all of the others cover a number of artists as you say. Art of the Dinosaur includes some of the artists that appear in the Dino Art volumes but each of those volumes cover different artists each time. The first of those two books covers a lot of well-known illustrators while the second has some of the newer people in the field. I'd get the two Dino Art volumes if you want a good overview of the best in the field with great reproductions (some magnificent foldouts of several wide-screen paintings really gives you a good look at the art!) and insightful interviews.

Mark Witton is supposed to have a new paleoart book coming out later this year.  It sounds like it's less of a summary or gallery and more of a technical considerations/how-to guide, similar to many of his blog posts.

Martyniuk's Field Guide to Mesozoic Birds has some nice theropod paintings.

PNSO makes some really beautiful encyclopedic volumes. The text is all in Chinese but the art features very prominently, so if you can find them I'd recommend them. They were on Amazon for a while but don't think they're there currently.

Maisey's Discovering Fossil Fishes alternates between specimen photographs and some pretty credible life reconstructions, if you're into that sort of thing.
